Raw Cacao || Superfood Series

It’s full blown Spring time. This means bathing suit season is on the horizon and now on constant flow in the mind. It also means that there are holidays passing by that promote the indulgence in chocolate. I’m going to crush your chocolate dreams and make you put down that conventional chocolate bar to indulge in pure Raw Cacao because this is the real deal,  the original source without any ugly modifications.

I have seen Raw Cacao (fresh off the tree) first hand here in Guatemala, and got roped into buying it off local children in Semuc Champey – it was a good choice. Raw Cacao is antioxidant-rich and contains NO added GMOs like soy-lecithin, dairy products or refined sugar – ingredients that are often found in highly processed commercial cocoa products (chocolate). Raw organic cacao is made using no heat or chemicals, and contains so many amazing nutritional and therapeutic benefits. Raw cacao is super high in magnesium and antioxidants, containing essential vitamins and minerals like iron, zinc, calcium and vitamin C.

The other brain releasing chemical that Raw Cacao promotes is Phenylethylamine, a mood elevator, anti-depressant that increases focus and alertness.

I prefer Raw Cacao nibs or Raw Cacao powder, both these items are easy to find in your local health food store. I love to put Raw Cacao nibs in one of my favorite smoothies – Banana + Kale+ Almond Milk + Mint+ Hemp Seeds+ Raw Cacao = the most delicious green smoothie EVER.

You can also use Cacao Powder or Nibs as a replacer to cocoa in many sweet deserts… Anything from chocolate covered strawberries to Macaroons!

1 cup raw almonds 1 1/2 cups unsweetened shredded coconut, plus more for coating 1/4 cup cacao powder Small pinch Himalayan salt 12 Medjool dates, pitted and soaked for 15 minutes

12 Medjool dates, pitted and soaked for 15 minutes

 

In a food processor fitted with the S blade, blend the almonds, coconut, cacao powder, and salt into a fine meal. Add the dates and process until combined. Using a 1 1/2 tablespoon cookie scoop, drop the cookies onto a baking sheet lined with parchment paper. Freeze for 20 minutes then roll in shredded coconut. Transfer to an air tight container and store in the freezer. Will keep for up to 6 weeks.

Yield: 25-30 macaroons
